I am a BIG fan of this easy to make recipe and have made it a number of times already. I did not make any adjustments to this recipe and love it the way it is. I also love the colors and the textures of the different ingredients. I highly recommend using the jalapeño - it's just the right touch!

I love this grain! I didn't know if this was to be eaten warm or cold. I was hungry so I ate it warm tonight and it was delicious. I expect it to be just as delicious tomorrow when I eat it cold for lunch.

I did have a little trouble finding the quinoa. In my grocery store, its in the health food section.
