Thai Pumpkin Soup
Sometimes, when deleting a chain email, dontcha just feel a little bit bad? Like, maybe you just deleted the email that really will get five million Russian rubles wired to your checking account?
It happened to me. Really.
Except it wasn’t a chain email. It was a recipe exchange. And it wasn’t five million Russian rubles. It was a Russian Bride named Katya. Ok, not so much Russian as Thai. And not a bride, but a soup recipe. That’s right. I received a very excellent, very free, very Thai, soup recipe right to my inbox. This internet stuff is great!
Check it out for yourself. Straight from whoknowswhere to my sister’s (no, not The Sistaster nor the Li’l Sis, but the older sis that is probably best described as The Ultracompetitive Sis) best friend Teha to me to you.
Time: 20 minutes
Serves: 5 – 6

Thai Pumpkin Soup
1 15 oz can pumpkin puree
1 15 oz can coconut milk
2 cups mango nectar
3 cups water
2 tablespoons rice vinegar
1/4 cup smooth or chunky peanut butter; your preference
2 veggie bullion cubes
1/2 an inch fresh ginger, minced
3 cloves garlic, minced
3 green chilies, minced
1/2 bunch of cilantro, chopped
3-4 green onions, chopped
Add the pumpkin puree, coconut milk, mango nectar, and water to a large pot and bring to a low boil.
Meanwhile, you can mince the ginger and green chilies (jalepenos are fine too) and add them to the pot.
Chop the cilantro and green onions, and reserve for a garnish.
Once the soup is hot, take out a small bowlful and stir in the peanut butter until it is completely incorporated. Add back to the pot.
Repeat with another bowlful and incorporate the bullion cubes.
Serve in bowls topped with the cilantro and green onions. Make it a full meal with Green Chili and Corn Fritters (vanesscipe coming soon!)

There was debate between the Lil’ Sis and myself about the use of chunky peanut butter. I personally love thepeanuts - and would have added more peanuts aside from the pb, whereas Lil’ Sis would have gone with Creamy in a second. But yum yum regardless.

Hey Kalyn - you did what you had to do! It took me 5 secs to send out a recipe and it just so happened that I got a few good ones back.
Katherine - yup, this one is easy and different. I’d recommend to anyone who licks the plate when they order Pad Thai!
Sis - I’d have to agree with you. I’d double the chunky next time around.
