Mum’s Healthy Chilli con Carne

Two things I love more than anything else to eat are fresh veg (from my own garden if at all possible) and a steaming hot bowl of chilli con carne.  So why not combine the two to produce this healthy and ever so tasty pan of yumminess?

  • 1 tbsp oil
  • 1 large onion, chopped
  • 1 red pepper, chopped
  • 2 garlic cloves, chopped
  • 1 courgette, chopped
  • 2 red chillies, deseeded and chopped
  • 1 cup of fresh cherry tomatoes
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 750g  minced beef
  • 1 beef stock cube
  • 1 good glug of red wine
  • 400g can chopped tomatoes
  • 1 tsp sugar
  • 2 tbsp tomato purée
  • 410g can red kidney beans
  •  boiled long grain rice
  • sour cream

This is pretty self explanatory, really and is very very simple. Put the onion in a large pan with the oil to soften and brown. After a couple of minutes add the garlic, paprika, cumin and the chillies. Get the mince into the pan and brown it off as well as separating out any lumps. Then add the red pepper, courgette and fresh tomatoes and continue to fry and soften them all off. Pop in the red wine (quick glass required for the cook, here), boil up for a minute then basically add all the other ingredients. Bring to the boil, then turn to a simmer and leave it whilst going and enjoying another glass of the red wine with hubby. The longer you can leave it simmering the better, just continue to check that it isn’t sticking. Add a touch more water if it seems to be drying out. (Unlike you and hubby!)

Then you are ready to serve with a portion of rice and a blob of the sour cream. You can add a handful of nachos on the side and a sprinkling of cheese on the top if you’re not too fussed about counting calories…

So, in this chilli, I have used chillies, red pepper, courgette and tomatoes picked that very afternoon in my own garden! Of course, if it happens to not be veg growing season, I always rely on my local Sainsburys for good fresh ingredients.
